The Recipe Exchange: Save Room For Dessert- Pudding

Dear Lynn,

Does anyone have a recipe for lasagna, either vegetarian or not?

Muriel from Coldwater says her Vanilla Pudding is better than any store bought brand.  Janise from McBain sent in her rich and delicious recipe for Hot Fudge Pudding.  Shelly from Jerome got this recipe for Ozark Pudding from her aunt who lives in Arkansas.  Chocolate Mousse is a favorite of Pam from Morenci.  She sent in her mouth-watering recipe.

VANILLA
PUDDING

2 c milk2/3 c sugar

1/4 c flour1/4 t salt

2 eggs1/2 t vanilla extract

1 to 2 drops almond flavoring1 to 2 bananas, if desired

DIRECTIONS:  Heat milk in a quart pan.  Meanwhile, mix sugar, flour and salt.  Beat in eggs, vanilla and almond.  Slowly pour into hot milk, stirring constantly.  Bring mixture to a slow boil and boil for 1 minute.  Add sliced bananas if desired.  Pudding can be served hot or chilled.

HOT
FUDGE
PUDDING

1 c flour2 t baking soda

1/4 t salt3/4 c sugar

1/4 c plus 2 T cocoa, divided2 T melted butter

1/2 c milk1 c chopped walnuts

1 c brown sugar1 3/4 c hot water

DIRECTIONS:  Sift together flour, baking soda, salt, sugar and 2 tablespoons of cocoa into a bowl.  Blend in melted butter and milk.  Add walnuts and mix well.  Spread batter evenly in a 9×9 inch baking pan.  Mix brown sugar and 1/4 cup of cocoa.  Sprinkle over batter.  Slowly pour hot water over batter.  Bake at 350 degrees for 45 minutes.  Delicious served warm with vanilla ice cream.

OZARK
PUDDING

4 large eggs, separated1 1/2 c sugar

2 large Granny Smith apples,1/2 c flour

    peeled and diced fine. 1/4 t salt

1 t baking powder1 c chopped pecans

DIRECTIONS:  Beat egg whites until stiff but not dry, set aside.   Beat sugar with egg yolks until lemony and thick.  Add diced apples.  Mix together flour, salt and baking powder.  Add to apple mixture.  Fold in nuts and mix well.  Spread mixture into a 13x9x2 inch baking pan.  Bake at 325 degrees for 35 to 40 minutes.  Makes about 8 servings.

CHOCOLATE
MOUSSE

1 t unflavored gelatin1 T cold water

2 T boiling water1/2 c sugar

1/4 c cocoa1 c chilled whipping cream

1 t vanilla

DIRECTIONS:  In a small bowl, sprinkle gelatin over cold water.  Let stand 1 minute.  Add boiling water and stir.  In a cold mixing bowl, stir together sugar and cocoa.  Add whipping cream and vanilla.  Beat until stiff peaks form.  Pour in gelatin and beat until well blended.  Spoon into serving dishes and chill.  Recipe can be doubled.
